Method
1. Preheat Air Fryer:o Preheat to 180°C (360°F) for 5 minutes.
2. Prepare Croquettes Mixture:
o In a food processor, finely chop the turkey or chicken. Remove and set aside. Pulse the fried onion straws separately until finely ground.
o In a large mixing bowl, combine the meat, stuffing, mashed potatoes, Parmesan, garlic, shallot, sage, and rosemary. Mix well and shape into golf-ball-sized patties.
3. Set Up the Dredging Station:
o In one bowl, whisk eggs with 50ml water. In another, combine panko bread crumbs with ground fried onion straws.
4. Coat the Croquettes:
o Dip each patty into the egg mixture, then into the bread crumb mixture, pressing crumbs to adhere.
5. Air Fry the Croquettes:
o Place the croquettes in a single layer in the air fryer basket. Lightly spray with cooking oil.
o Cook for 6 minutes, flip, spray again, and cook for another 6 minutes until golden and crispy.
6. Prepare Cranberry Dip:
o In a blender or food processor, combine cranberry sauce, sour cream, horseradish, black pepper, and jalapeño. Blend until smooth.
7. Make the Salsa:
o Combine dill, gherkins, red onion, lemon rind, lemon juice, and olive oil in a bowl. Season with salt and pepper to taste.
8. Serve:
o Plate the croquettes with the cranberry dip on the side and top with a spoonful of dill, gherkin, and red onion salsa.
Ingredients
Croquettes:
• 300g leftover turkey or chicken, finely chopped
• 200g leftover stuffing
• 150g leftover mashed potatoes
• 50g grated Parmesan cheese
• 4 garlic cloves, minced
• 1 shallot, minced
• 1 tbsp fresh sage, chopped
• 1 tsp fresh rosemary, chopped
• 2 eggs
• 100g panko bread crumbs
• 50g fried onion straws
Cranberry Dip:
• 125g cranberry sauce
• 240ml sour cream
• 15g horseradish
• 1 tsp black pepper
• 1 jalapeño, seeded and diced
Dill, Gherkin, and Red Onion Salsa:
• 1 tbsp fresh dill, finely chopped
• 6 Opies Mini Gherkins (approx. 150g), halved and sliced
• 50g red onion, finely chopped
• Opies Sliced Lemon rind, finely grated
• 10ml lemon juice
• 5ml olive oil
• Salt and pepper, to taste
