Method
1. Pre-heat the oven to 220°C / 200°C fan / gas 6. Heat the oil in a pan and fry the onion for 5-6 minutes until softened. Add the minced beef and fry for a further 5-10 minutes until browned, then stir in the BBQ sauce and season generously.2. Meanwhile spread a third of the tortilla chips over a deep 20cm x 20cm ovenproof baking dish so that they overlap then scatter with a third of the cheese. Add layers of minced beef, tomatoes, gherkins and onions until all the chips have been used, followed by the remaining cheese.
3. Place in the oven and bake for 10 minutes or until the cheese has melted.
4. Remove, drizzle over the burger relish and jalapenos if using, and serve straight away.
For air-fryer method:
1. Heat the oil in a pan and fry the onion for 5-6 minutes until softened. Add the minced beef and fry for a further 5-10 minutes until browned, then stir in the BBQ sauce and season generously.
2. Scatter a third of the tortilla chips inside the air fryer basket then add a third of the cheese, followed by layers of minced beef, tomatoes, gherkins and onions until all the chips have been used, followed by the remaining cheese.
3. Air fry at 180°C for 3-5 minutes or until the cheese is melty, keeping an eye on the cheese to make sure it doesn’t burn.
Tip
Tip: If you haven’t got any Monterey Jack cheese, try a combination of Edam and Cheddar.Ingredients

• 1 onion, finely diced
• 450g minced beef
• 2 tbsp BBQ sauce
• Salt and pepper, to taste
• 200g bag lightly salted tortilla chips
• 75g Cheddar cheese, grated
• 75g Monterey Jack cheese, grated
• 2 tomatoes, diced
• ½ jar Opies Mini Gherkins, roughly chopped
• ½ jar Opies Mini Silverskin Onions, roughly chopped
• 6 tbsp burger relish
• 50g sliced jalapenos, optional
