Method
1. Pre-heat oven to 200°C / fan 180°C / gas 6.2. Cut out and grease four squares of foil, then season the cod with salt and pepper. Place one fillet on top of each foil piece.
3. Melt butter in a frying pan and cook the onion until soft, then stir in the breadcrumbs, parsley, lemon zest and juice followed by the pickled walnuts.
4. Divide the mixture into four and place a portion on top of each cod fillet.
5. Wrap foil loosely around the fish, place on a baking tray and bake for 20 minutes.
Tip
Serve with some buttery new potatoes and a fresh, crisp salad. For a cheaper and more sustainable cut of fish, swap the cod for something like pollock.Ingredients

2 onions, finely chopped
100g fresh breadcrumbs
1 tbsp parsley, finely chopped

1 tbsp lemon juice, freshly squeezed
100g Opies Pickled Walnuts, roughly chopped
