Method

For the Broth
1 tbsp sesame oil
2 garlic cloves, minced
1-inch piece of ginger, grated
1 tbsp miso paste
1 tbsp soy sauce
1 tbsp mirin
1 tsp chilli flakes (optional)
750ml beef stock
1 tbsp Opies Pickled Walnuts, finely chopped
For the Beef
250g sirloin or ribeye steak
1 tbsp soy sauce
1 tsp honey
½ tsp black pepper
1 tbsp vegetable oil
For Assembly
2 portions ramen noodles, cooked
1 soft-boiled egg, halved
2 tbsp Opies Pickled Walnuts, sliced
1 spring onion, finely chopped
½ red chilli, sliced (optional)
Handful of pak choi or spinach
Sesame seeds, for garnish

Prepare the Broth: Heat sesame oil in a pan over medium heat. Add garlic and ginger, sauté for 1 minute. Stir in miso paste, soy sauce, mirin, and chilli flakes. Pour in the beef stock and bring to a simmer. Add chopped Opies Pickled Walnuts and let it cook for 15–20 minutes for deep flavor. Cook the Beef: While the broth simmers, rub the steak with soy sauce, honey, and black pepper. Heat vegetable oil in a pan and sear the steak for 2–3 minutes per side (medium-rare) or longer if preferred. Rest for 5 minutes, then slice thinly. Assemble the Ramen: Divide the cooked noodles between bowls. Pour the hot broth over the noodles. Arrange the sliced beef, soft-boiled egg, pak choi, and Opies Pickled Walnuts on top. Garnish & Serve: Sprinkle with spring onions, red chilli, and sesame seeds. Serve immediately and enjoy!
