Method
1. Melt Chocolate:Break chocolate into pieces and melt in a heatproof bowl over simmering water. Allow it to cool slightly.
2. Prepare Cream Mixture:
In a bowl, whip the cream until it thickens. Add egg yolks and sugar, and beat to combine.
3. Whisk Egg Whites:
In a separate bowl, beat egg whites until stiff peaks form.
4. Combine Mixtures:
Pour melted chocolate into the cream mixture, stirring carefully. Gently fold in the egg whites until fully incorporated.
5. Layer the Mousse:
Spoon a layer of mousse into serving glasses or bowls. Add a few Opies Black Cherries and drizzle some kirsch syrup. Repeat layers until the mousse mixture is used up.
6. Garnish and Chill:
Top with reserved cherries and grated dark chocolate. Chill in the fridge for at least 15 minutes before serving.
Ingredients
• 200g dark chocolate (70% cocoa solids)
• 1 jar Opies Black Cherries with Luxardo® Kirsch (reserve syrup and some cherries for garnish)
• 200ml whipping cream
• 4 eggs (separated into yolks and whites)
• 2 tbsp golden caster sugar
To Serve:
• Reserved Opies Black Cherries
• Grated dark chocolate
