Ginger Nojito

Method

1. In a highball glass slightly bruise the mint leaves until fragrant.
2. Add the ice and all remaining ingredients into the glass, stirring well, then top up with soda water.
3. Garnish with cubes of Opies Crystallised Stem Ginger, a spring of mint and lime wedge.

Ingredients

• 12 mint leaves
• Crushed ice
• 15ml syrup from a jar of Opies Stem Ginger in Syrup
• 20ml freshly squeezed lime juice
• Soda water
• 3 cubes of Opies Crystallised Stem Ginger
