• 8 field mushrooms, thinly sliced
• 100g Opies Pickled walnuts
• 50g chestnuts
• 1 tbsp vegetable oil
• 100g crème fraiche
• 50g cheddar cheese, grated
• 4 large sheets of filo pastry
• Sea salt and freshly ground black pepper
• 100g blue cheese
