Method
1. Prepare the Egg Mixture:In a bowl, whisk together eggs, icing sugar, milk, and cinnamon powder until smooth.
2. Soak the Bread:
Dip each slice of brioche into the egg mixture, ensuring both sides are well-coated and soaked evenly.
3. Fry the Bread:
Heat a non-stick frying pan over medium heat and add 2 tbsp sunflower oil. Fry the soaked brioche slices for 1 minute on each side until golden brown.
4. Finish with Butter:
Add a small amount of butter to the pan, flipping the bread for another 1-2 minutes until it develops a rich, golden finish.
5. Caramelize the Sugar:
Transfer the cooked bread to a baking tray. Sprinkle with demerara sugar and caramelize the topping using a blowtorch or by placing under a hot grill for 1-2 minutes.
6. Serve:
Dust the toast with icing sugar, and serve warm with whipped cream and Opies Black Cherries in Kirsch on the side.
Tip
If you prefer a thicker cherry sauce, warm the Cherries in Kirsch and thicken with a paste made from 1 tsp arrowroot mixed with 1 tsp water, stirring into the cherries until thickened.Ingredients
